I'm conversely intrigued as to why you find parts of the game "not vital".
Would you seek to correct mistakes in a famous book or painting?
If you did, could it really be considered a replacement for the original, or a new piece of art entirely?

Fixed camera angles and weird voice acting are 100% limitations of the time period and likely not artistic choices, but intentionality of the author may not necessarily be relevant to your subjective experience of the game.

I don't believe the argument is that these effects were intentional but that they were an intrinsic part of the original game that is missing from the remake.
If we consider games as Art, then "jank" is part of that holistic experience for old games, and without it, the interpretation is different.
