As for the head, when I did mine I followed Dikko's tutorial as closely as I could for an anthro design and I think it ended up pretty good. Ofc I'm not sure how well it'll translate to a design with a beak but it helped a lot with the general shape www.youtube.com/watch?v=Ekd7...

I'm not the most experienced with Blender but from what I've done with the smooth tool it helps a lot to use the grab tools alongside it to sculpt out a general shape (also make sure symmetry is enabled under the tool section to the left of the outliner)
