4) Add Rotel tomatoes and beans to skillet and bring up to heat.
5) Add stock and bring to a boil, then lower to simmer and cook for 10-12 mins., stirring to keep from sticking.
6) Serve with plain yogurt or sour cream and top with chopped parsley.

BEAN STEW cont'd.
1 tsp smoked paprika
1 tsp ground cumin
1 TBSP avocado oil
1 32oz. carton VEGETABLE STOCK

1) Heat oil in skillet on med-high; add onion and sweet pepper and cook until softened -- about 5-7 mins.
2) Add garlic and cook for 1-2 mins.
3) Add spices and stir to distribute.

Hi kiddos! Here's a kind of easy recipe for BEAN STEW.
1 can lentils, drained/rinsed
1 can chickpeas, drained/rinsed
1 can light kidney beans, drained/rinsed
1 can Rotel Tomatoes w/Green Chilis
1 large onion, diced
2 sweet bell peppers, diced
2 cloves garlic, minced
1/2 TBSP chili powder
