Finally got our kitchen back in order after having to replace cabinets, counters, and cooktop. Roasting our first chicken since late March. Used a shichimi tōgarashi rub this time around.

Another Sunday, another Sunday chicken. Here’s this week’s, rubbed with a blend of khmeli suneli and Creole spices with some extra achiote and chile powder thrown in. (Salt free.) Stuffed the cavity with sprigs of rosemary, thyme and sage.

This was a pretty and tasty dinner. Chilean sea bass seasoned with a no-salt Creole spice blend, garnished with mango/pineapple pico and served with sautéed rapini and roasted baby ‘tater slices.

Once I get the pot boiling, I’ll add some unsalted tomato paste.

(For some reason the jar looks huge in the photo but it’s only 7 ounces.)

For health reasons, we avoid added salt on my household so the beans and diced tomatoes are no-salt-added.

Westbrae Natural and Eden are both great brands for those who want canned beans with no (vs low) sodium.

Making a pot of black beans. My local Sprouts market had *red* carrots in stock this week, so I’m using them instead of the usual orange kind.

It was 38F (32F windchill) on the back patio this morning but I still managed to get out there and do a strength training workout. Barbell and dumbbells were a bit cold though.

I know it’s worse almost everywhere, but this is rather unpleasant and not our usual winter weather pattern. Cold, damp, windy, and pissing rain.

It’s time to make soup! Yesterday’s batch of chicken stock chilled into gelatin so that’s a nice way to start.

You’ve been kidnapped. The characters of the last tv show you watched are trying to rescue you. Who is coming to save you?

This week’s Sunday chicken is ready for roasting. This one is a 4.1 pound rooster stuffed with sprigs of rosemary and green onion.

This is the speed measured from the sofa while watching the Japanese series “Black Swindler” on Netflix.
January 5, 2025 at 3:10 AM
OK, I am pleased with these before and after speeds from my home office, on the opposite end of the house from the modem/router. (It’s more than 2X that fast in hubby’s office and in the fam room where the TV is.)

Making a batch of lentil soup (dāl) with some lovely golden lentils from Timeless Natural Food in Montana. I made the chicken stock yesterday from two frozen rooster carcasses. The celery had lovely leaves so put those in along with the diced stalks, red and white onion, and carrots.

I’m a sucker for an Arthurian retelling that really digs into the history of Sub-Roman Britain. Think I’ll give this one a go. #BookSky
