If you have a good relationship with tarmac I would suggest "Via degli Dei" 120km in 5/6 days, from Bologna to Florance. B&b and hotels in every stretch and beautiful scenery in remote villages across the Italian Apennines. Doable all year long. Booking in advance in high season very much advised.
