I feel like this is Larian's jam. Divinity OS2 was the same way. You need several playthroughs to unlock most of the story options and endings.

It depends a lot on the room, but me personally, I always mix mono in a live environment, except maybe some stereo reverb and delay. If you hard pan instruments to one side, the people standing on the other side don't hear them, and that's not an equitable listening experience for all patrons.
