New weekend, new leg!

These last two impala legs have had an unusually distinct dry grass scent and taste note. It's amazing how that comes through in the meat.

Breakfast. 😌

This is a kilogram of blesbok leg. It easily serves as my main meal for the day, but one of the surprising things about raw meat is how _light_ it feels.

A kilogram of most other food will leave me feeling quite stuffed, but this leaves me feeling like i've barely eaten half of that.

Gemsbok shank! Such a contrast to the waterbok: dark, rich, slightly smokey, plenty of texture. Good marrow.

Waterbok fillet for lunch.

This is the first waterbok i've tried, and it was surprisingly good, given how light in colour the meat looks! It had a unique, delicious, citrusy taste. I'll have to try this again.

The flavour of the meat leads with a zesty tang, followed by a darker, rounder, surprisingly smokey flavour.

Big hunk of springbok shoulder! Enough for dinner plus two more meals.

This was exceptional. The marrow was fresh and delicious, and the meat rich and complex in flavour.
