It's interesting when you use brushes as intermediate steps. To create something that you then expand (or maybe not) and then use for construction. Such as the zen garden thing I did.

Having un-outlined strokes in brushes can make a lot of sense and gives you a boatload of opportunities. You only have to make sure to not apply fills to them.
