In early 1960s issues of Essex Countryside magazine there was much discussion in the readers' pages of Essex pudding - something they ate in the 1890s/1900s as a first course with lots of gravy. One reader supplied a recipe & I had a go at cooking one but it didn't turn out very well 😞
