we moved into a house with an existing structure for this in 2017 and I just kind of went nuts with it. Now I have the luxury of insurance money to rebuild, and I can think about what scale we really want. Could build a tiny sugar shack, and a nice shed or part of a garage instead of another 12x16'

I've got 150 taps on vacuum with another 100 I can tap in to existing lines, heh.
The question is whether I _want_ to keep running stuff at that scale. I'd made 17 gallons this year before stuff blew up, and I was probably on track for double that.

I've actually been thinking of just boiling outdoors, and building a different kind of outbuilding. We're not under any obligation to rebuild, though not doing so blocks access to the full comp amount.
At our scale I only want to cook 8-10 times a year, do I need a structure?

Sadly we had a fire that burned us out at the end of this year, but it was all insured and I am planning on rebuilding, maybe next summer.
Watch out for loose sparks that go under floorboards. Also, maybe don't put a wood floor in a sugar house (was an existing structure, I would not have done so)

It's a workhorse, also weirdly I got it because it appears to be the best or one of the best solutions for audio to pitch CV. I'm trying to ram a mic'd sax into one half of Disting (compressor), then derive CV from compressed out and feed audio and CV both to spectraphon. Results pending.
