One solution would be to abandon level ups and weapon scaling entirely, but at that point it wouldn't be Elden Ring anymore.
It's very clear that this game exists because they could reuse assets and count on brand recognition. The original Elden Ring isn't that different on this aspect.

Comparing it to Binding of Isaac is silly. Nightreign is much closer to Hades with all the different weapons and playstyles, and even that is a flawed comparison.
The different classes are clearly there because the fast pace of the game can't accommodate the customization of the original game.
