Decided to process the vegan patties today. They were alright but can't beat the beyond ones.

Also experimented with buns and condiments.

"Honey" Mustard
Mixed greens
Caramelized onions
And pickled red cabbage

Once in a homemade burger bun

Went out of my way to visit a vegan butcher shop yesterday and indulged in a panini and some burger patties. Lil pricey but I'll definitely return to try some of the other stuff they were offering someday

Inspiration struck me over the head with a rolling pin again, so here is another lil thrown together recipe experiment of mine. Pan fried Schlupfnudeln (it's kinda like gnocchi but longer and German) topped with a herbal creamy chanterelle gravy.

Felt a lil adventurous today and made a refried bean quesadilla with kimchi in it. It ended up a lil too sour but if the amount of kimchi is reduced that should sort itself out.

Once the sauce has finished simmering remove it from the heat and add your balsamic vinegar, soy sauce, oregano, as well as the optional almond butter. Season to taste with salt and pepper and enjoy either over noodles or turn the sauce into a lasagna

Now you can either set your stove to medium low and let the sauce simmer for 4 hours (stirring occasionally) or alternatively place the pot (without the lid) into the oven at 140C (284F) for the same time.

Once all your veggies have been diced/shredded, heat a pot over medium heat. Once hot add the onions withouth adding any oil and sweat them for a couple minutes. Then add about 2 tablespoons of your olive oil as well as 2 large handfuls of your chopped veggies. Saute until a layer of fond has formed

Bake the tofu for 30-45 minutes, stirring and hacking it into pieces after half and 3/4 of the cooktime has elapsed. By the end you should have some nicely browned crispy crumbly tofu. In the meantime blitz or grate both carrots and celery and finely dice your onions.

We start by preparing our tofu. Preheat the oven to 230C (446F). In the meantime either crumble your tofu with a fork or use your food processor to blitz it. Mix the crumbled tofu with a pinch of salt, the neutral oil and a splash of wine. Spread everything out on a bakingsheet without baking paper.

120ml liquid from a can of chickpeas or beans
2 Tbsp almond butter (optional)
2 Tsp oregano
100ml olive oil
2 Tbsp soy sauce
2 Tbsp balsamico

As for utensils you'll need a large baking sheet, the biggest pot you can find, and optionally a food processor.
