which makes me wonder what would happen if we had the recordings of Bach, Mozart, Albinoni playing in public, and of their anonymous contemporaries that performed in the streets.

His studio recordings differ a lot from each other. Many of them seem to be uneven, forced, even plain boring, but the live albums are always good. Maybe his perfectionism sometimes got in the way in the studio, but he was always able to unleash and forget himself on stage.
