YouTube provides this YouTubeKids App where parents can block videos/channels their kids watch from the Parents app. However, to see the kids watch history you have to do have to use the Kid’s app

Apple has this system where kids can request access to apps and parents get an iMessage where they can approve. However there is no mechanism to “unapprove” an app: discussions.apple.com/thread/25346...
