The only option to change the colour of the green bubbles has been colourblind mode, and I predict that the only option to improve the legibility of iOS 26 etc.

Apple’s green bubbles famously fail contrast tests (allegedly) to make blue bubbles more appealing.
I agree that Apple has good (often industry leading) features for those with atypical access to their products. But they’ve shown (now more that ever imo) that they are willing to forgo accessibility
