The internet is mostly bad, but it has given me the gift of shredding tofu with a cheese grater. It’s the easiest and fastest way to get it not just edible but…good! A little soy sauce, lemon pepper, nutritional yeast, and olive oil on parchment paper, 20 min on 450F in convection oven.
