Not to be a nuance-cel, but ska originated in Jamaica and actually predates reggae. The UK ska revival in the 70s/80s was also inherently multicultural and mutliracial. Only when skate punk types in 90s California got ahold of that sound did it become associated primarily w/ white kids.

fwiw I find that sautéing or searing and then (!) briefly steaming is a good way to square that circle! Basically once the broc's got some nice color I'll add a tbsp or two of water to the pan, reduce the heat from medium to medium-low, and then cover till the desired texture is reached.
