Baguettes are tricky. I finally was able to get one the way I wanted a few months back. After MANY attempts.

I also made some focaccia tonight! Yours looks delish!

If you haven't baked in a while it could be your starter wasn't awake enough yet, or you pushed proofing a little too far. It's summer (at least where I am) so it can over proof if you look away for a second it seems.

Capturing as much steam as I could during baking, and lowering my overall hydration of the dough for a little more control. And patience.

It's crazy how little you're left with when they're done cooking.
