Caramelized Apple Pie - Loved how this one set up! Because you roast the apples first, it really helps minimize the moisture when they go into the pie crust so the apples stayed the same volume and no soggy bottom. The recipe doesn't call for spices, but I added about 2 tsps of apple pie spice.

Sesame-Swirled Pumpkin Pie - Very nutty flavor from the tahini, not as sweet as a traditional pumpkin pie and I liked the addition black pepper. Did not go over well with the 6 year old who joined us for dinner.
