One shutter speed and one aperture? How does one make photos with one choice of exposure? What am I missing!?!

I just shot with my IIc this morning! So, is the 250D the stock where they remove the remjet AFTER it’s shot (but before processing)? Which lab?
I get all my remjet stuff mixed up. The reds are amazing. Cheers!
