After discovering sausage rolls on this last trip to the UK, my permanent side quest has been trying to perfect making them at home.

Thankfully Greggs shared their recipe online during lockdown.
Sausage rolls. Delicious sausage meat wrapped in golden flaky puff pastry.

Hopefully you can catch sight of a roadrunner while in the southwest! They are amazing to spot in the wild. Like little dinosaurs lost in the modern world!

I did it, y’all! I found a recipe online to make Greggs-style sausage rolls at home! They’re ugly, and I still need to find the a better sausage flavor match, but these were pretty close!
Homemade sausage rolls on a baking sheet, fresh from the oven. The puff pastry is golden and flaky, as the dark brown pork sausage meat peeks out from the ends of the rolls. Delicious.

What do I miss most from the UK?

There just isn’t anything quite like them in west Texas. Y’all don’t know how good you have it.

Welsh cakes. Like a delicious cross between a pancake and an American buttermilk biscuit. In this stock photo, they appear to have blueberries, are piled haphazardly on a serving rack, and one has jam and butter/cream on top of it.

Thanks to the amazing selection of miniature lines at Firestorm Games in Cardiff, I was able to pick up these two boxes and easily kitbash some great #TrenchCrusade #NewAntioch Yeomen. Such amazing kits! Thanks to @peachytips.bsky.social for the inspiration, by the way!

Between these and the recent Krieg releases, it feels like Games Workshop has seriously said “We need to get in on that Trench Crusade money!”
