Bingo. The guitar top is a little like a speaker cone, the energy from the strings vibrates it, and that's where the sound comes from. If the top was really stiff you'd get very little sound, like an unplugged electric guitar.

Oh! I've seen them used behind the counter, at frite stalls and things, but you're right it does seem wrong for normal people to have to handle such a thing...
