But you are right - the pickup reacts to the movement of the metal in the strings, the vibration of the string will be somewhat affeted by how the body responds to it, but more so in its acoustic sound than the electric amified sound.

It would probably sound incredibly similar.

There's an interesting video here where they strip away all the elements of the guitars construction that are claimed to affect it's amplified sound..

Yes, and the f holes in jazz guitars, violins and cellos, etc. The OP makes a reasonable assumption tho, I'm sure most people do similar.

Bingo. The guitar top is a little like a speaker cone, the energy from the strings vibrates it, and that's where the sound comes from. If the top was really stiff you'd get very little sound, like an unplugged electric guitar.
