Hi, Colton! Apologies for the delay in getting back to you, but one of our Biologists wanted to get back to you with this response:
Sorry I am just getting to this. That pattern in natural camouflage for the young Lake Sturgeon, they all have it, but the patterns do vary. Once they get about 2 feet long, the dark pigment disappears and they are mostly uniformly tan/grey. At that size, they are too big to be eaten by other fishes, so they do not need the camouflage. - Bernie
