When cooked they ended up a little flatter than I usually make them (the result of the extra butter). Not a problem, just slightly different. Amusingly, they look a lot like the peanut biscuits my mum used to make. Won't taste the same though!

It certainly looked like my usual cookie dough (except it was brown coloured instead of the usualy off-white).
Just a little moister than usual, I may not have need to add so much butter.
And it indeed tasted like cookie dough (I had to make sure before I baked it 😉)

I decided to use my regular choc chip cookie recipe, but just add some of the powder and a little extra butter to moisten up the extra dryness.

So, we got this violet crumble hot chocolate powder recently. And after having in drink (which were tasty) we of course then wondered if it could be used in baking.
Could I have tasty choc honeycomb treats?
And so today I tried making cookies to see.

You know what's nice? When you just dump whatever is left in your half used pack of icing sugar in the bowl, mix it up, and discover it was exactly the right amount for the dozen cupcakes.

I'm quite pleased with how well the GF flour rises and tastes, if it weren't for the horrid (squeaky sand) texture it would be pretty much the same as working with normal wheat flour.
Made these 100s times before, I know they're gonna taste good.

White chocolate mud cake, now with purple strips for funzies!
It's funny how when I mix together melted white chocolate and sour cream, both of which a very white on their own, the resulting icing becomes an off white/creamy colour.
It's not elegant looking, but it will be tasty!

Ok, cakes iced!
Carrot cake I decided to go with just a small drizzle of lemon icing.
So the cake is no long fully sugar free, but still only has a small amount.
(I don't have any guests allergic, just diabetics who can only have small doses)

Third up: White Chocolate mud cake.
This is not free of anything like the others, chock-a-block of sugar, gluten and lactose.
It may not look like much, but once I ice this bad boy up... it will still not look great. But I've made it 100 times and I know it will taste fully schmick!

Second: Gingerbread cake.
Lactose & gluten free, but much sugar abound!
This one I cooked for 5 min less that the listed time, and it still burnt on top! This photo was taken after I scrapped the top off and sprinkled some cinnamon sugar on top (at bf's suggestion, I was just going to put sugar).

First up: carrot cake.
Sugar, lactose and gluten free.
Made this once years ago as mini cupcake and wasn't hugely impressed, but thought I'd give it another go in big cake form.
Well.. it's tiny friends. So short!
Still not sure if I'm going to ice this (since sugar free really cuts down options)
