It could taste better after refrigeration because as soon as they cool the moisture evaporates and that could intensify the flavour, salt, and oils used during cooking. When you reheat fries, crystallized starch can break down again restoring some of the taste.

As soon as fries cool the water inside evaporates making the fries soggy, the starch in the fries will crystalize as soon as they're cooled making the taste harder. The oil used in frying in the fries will solidify partially once cooled making them greasy. Salt will also absorb and draw out moisture
