It has been stated they've played other teams before the, erm, consistent losing streak against the Goers.

Taking the match with the Al Bhed Psyches as an example, the Aurochs really didn't hold up too well. There's implied history the Aurochs sucked before X's story.

Tidus kinda helped reinvigorate the team, hyping them up to not just play, but to WIN! To put their all in the game as a proper sport, not simply a distraction from Sin's terror.

All of that is why they lost to the Goers, and to just about anyone, before.

It's a very subtle message until the end, but the theme with everyone, including Wakka, is about finding renewed faith and hope.

The Aurochs "would have lost to anyone" because their goal was to "Do their best", not just win. They played because they felt they had to, for what else is there?

If I remember right, a lot of it has to do with Wakka's mindset.

I forget the exact timeline of events, but Wakka's brother enlisted with the crusaders, died, and Wakka himself failed as a guardian on his first pilgrimage. Not to mention the impact all that had on him and Lulu as well.
