Your mouse doesn't actually click until you take your finger off the button.
If you accidentally click on a button (and you realise in time) keep your finger on the mouse and move the cursor off the button. When you let go it won't have clicked on it.

To switch quicky between text fields (e.g. username to password) press the Tab key (above Caps Lock).
To go back through text fields hold Shift (below Caps Lock) and press Tab.
