Made some soul food today. Kinda like kung pao chicken but without the red chilies. I used cayenne for heat, unorthodox but it works for me!

Bonus video of how I sear steak on cast iron after it’s already cooked sous vide. A HOT cast iron skillet below, and a torch on top yields a nice sear on the outside without overcooking the steak.

Sous vide ribeye steaks. Dry brine for 6 hours with big crystals of sea salt. Cast iron sear with a blowtorch.
4th picture is sous vide sealed steak left in the fridge for a couple days before searing on the grill.
I prefer the former.
