Ok Joe, now we’re in a fight! Pizza was originally invented by Italians but I think it’s way more of a US thing. We eat so much more of it and have so many varieties. I’ve claimed this expertise having spent about two weeks in Italy, visiting one town and two cities.

You should talk to Poor George. He uses a classic recipe which I think calls for 7 cups of chopped onions, cooked down in the manner you picture. It’s divine.
