In the future “screens” will probably evolve into 3d tactile interfaces so I suspect the distinction will eventually disappear.

p.s. I still prefer mechanical watches and my new “knobs and switched” Marshall speaker so aesthetically I agree with you!

There are some arguments for screens over knobs, one being that a screen can be replaced easily. Also, you can have two screens (or your own tablet) as backup, and you can upgrade without new hardware. I think reaction times are mostly about bad software and overcomplicated screen design.
