In case you haven’t heard it enough already, it is very, very warm outside. To help combat the heat, I made a cold dinner for the week: watermelon gazpacho and romesco pasta with spicy Kale and chickpeas.

Tu-not bowl! Our dinner this week is a sushi bowl featuring watermelon tuna (marinated, baked, marinated again) on a bed of short-grain brown rice with shredded carrot, edamame, avocado, and smashed cucumbers. A sushi roll in a bowl topped with sriracha mayo.

Last week’s #vegan #oilfree dinner was al pastor tacos made with soy curls. I topped it with a fresh salsa verde, onion and cilantro relish, and more fresh pineapple. Delicious.

This week, I made Chettinad Chana Masala. The spice blend of fresh cracked pepper and crushed fennel seed mixes with Kashmiri and cayenne pepper to give a warming, flavorful heat. I served it with raw onion and brown basmati.

Last night, @mistermallard.gobirds.online and I made a Mexican-inspired pizza and garlic knots. Knots are coated with taco seasonings and a queso dip on the side. The pizza has refried beans as the base for jalapeno, peppers, onions, and corn with vegan cheese spread on top.

The judgment I’ve been getting from her while recovering from #topsurgery is cold and cutting. As an update, the drains are out and bandage off (still so much adhesive). I am in the compression vest for a few weeks now.

#topsurgery Recovery Day 4 — it is difficult to fully process that it is done. I mean the drains and general inability to stand up straight are constant reminders, but I want to see the result. Drains (not shown) and bandage come off Friday.
