But I also don't fit into the "woman" category, and nonbinary as a word/idea in english (to my understanding anyway) feels like it lacks a lot of nuance for what gender beyond woman/man is and could be.

I only know english as my spoken/written language, and gender ideas within the language are generally limited to "man" or "woman" categories, with nonbinary being the catch-all for everything that falls outside the main two. In my case, I'm male but don't rly fit into the "man" category,
