The sourdough recipe I use calls for 20% starter. So for 1000g flour, 200 grams starter. For 500g flour, 100g starter.
The amount of starter you used (10%) might fully rise if given enough time (overnight rise maybe?) But doubling the starter might be a good option to try as well.

I quite enjoyed the first few episodes of this but lost my momentum when the slapstick evil maids showed up. I found the switch in tone a little jarring. Do they hang around for the rest of the series or does the more dramatic time prevail?
