Positron is in general availability with stable releases on desktop and Posit Workbench.
Positron Assistant is still in preview.
I'm curious though, you're launching interactive sessions via SSH _into_ Posit Connect?

You could create a plain "text file" and then save as .tex.
Alternatively, there are also dedicated LaTex extensions like: open-vsx.org/extension/Ja... and open-vsx.org/extension/te...
That can add on more capabilities for pure LaTeX editing.
