For the last few years I’ve brined, spatchcocked and smoked my turkeys. Usually two 12-14 pound vs one big bird (trying to get a better flavor). They come out fine. Everyone raves about just meh to me for all that work.

Unpopular Opinion: Turkey is just not a good meat. No other meat requires so much effort to taste good.
I spend far less effort on my Christmas prime rib than my Thanksgiving turkey and always enjoy the Prime Rib more.

IDK…as a teen who hated hair metal but loved The Smiths, The Cure, Joy Division…I didn’t care for the Beatles. They were everywhere in the mid-80s and I think I was just anti-pop culture…too edgy perhaps.
Only in my early 30s did I sort of “discover” them and developed a deep appreciation.
