Unlike Nigella's fish finger bhorta (another favourite of mine) recipe, which was more a fish finger jhuri bhaja, this is definitely a bhorta recipe.

And there's even the option of scrambling eggs into your bhajja begun bhorta, a bit like Iranian mirza ghasemi. So it's all much more sophisticated than simple "Eggplant Curry".
Hmm, maybe I should call any American dish with, say, beef as the main ingredient "Beef food"?

Also, if Bengali this is bhajja begun bhorta where the onions are fried & the mashed aubergine is refried versus kacha begun bhorta where the onions are raw and the mashed aubergine isn't refried. I love both. So even begun bhorta isn't just begun bhorta!
