bean of the week! Hyacinth (Lablab purpureus) is a perennial vine that produces striking somewhat flat purple pods reminiscent of snow peas. Edible if boiled well with several changes of the water. Used culinarily in East, Southeast, and South Asia, as well as East Africa. Plants are cold hardy too.
