I always like to tell the "not all men" people that it's obviously not all men. Since we both understand that, it doesn't need to be said. Then I ask why they said it to REALLY get them thinking about why they felt the need to.

This! I have lost all patience for people like that. "They're terrible," no buts. Full stop. That's where it should end.
