i am pro snails. i prefer them the way my mom cooks them with tomato and chorizo (yep, the best is the sauce) but "cargols a la llauna" are pretty damn good too. i dont know about mushy, their texture is pretty hard (dont eat the innards tho!) i have no idea the way DT eats them in restaurants.. 🤷🏻♀️
