La Fleur en Papier Doré, Brussels. One of the more fascinating tavern interiors I've come across. More in the post 🍻

"All Schnitzel cooks agree that the color of a Wiener Schnitzel should be light golden brown. Certain Breughel paintings and Stradivari violins have the perfect Schnitzel color."

Fine food writing.

Some "classic-ness" happening this afternoon right here in Oklahoma. Seems I haven't had Samuel Smith's Yorkshire Stingo since 2012.

That's not for lack of tryin'. It's not something we see here where the wind blows down the plains. Had to go to Wizard of Oz country (Goebel in Wichita) to get sum.

Wasn't expecting to find a reference to Braudel in the intro @eoghanwalshbxl.bsky.social 's delightful History of Brussels Beer. Much as I love Braudel (I wrote a paper in grad school on narrative scale in history and read the whole damn Mediterranean), I'm glad you stuck to 50 objects. 🙂🍻

Me, I don't need Chat GPT or other generative AI software to help me blunder my way through writing. Plenty of alcohol seems to do the trick.

Adler Bräu (Stettfeld, Franconia), Altfränkisches Lagerbier.

One nice-looking beer. And one of the 25 delicious beers on my summer beer travel list. Cheers!

Street scenes in Vienna when they still delivered beer by horse-drawn wagon. In Wagner, Das große Buch von Bier (1984). Date of photo unknown. Photographer unknown.

I could seriously go for an Altbier right about now.

Today's the anniversary of Francesco di Paola's death.

Why's that important? Turn Paola into Paulaner, and there you have it. Starting in 1651, the monks brewed a particularly strong beer each spring to honour the founder of their order.

That beer eventually became Salvator.

Mass-market Japanese beer may not be my favourite beer in the world, but paired with okonomiyaki, it's just fine. (And Yebisu is among the better beers widely available in Japan.)

Throwback to Tokyo earlier this month. Kanpai!

Apropos of absolutely nothing other than beer pix.

This is one of my faves: Dolomitenhütte near Lienz in East Tirol.

Bonus trivia points: East Tirol is an Austrian exclave.

Worth noting: Loncium (in Carinthia) brews some fine beer.

Happy #Orval Day, everyone!

Since I overindulged last night, I won't be opening one of the Orvals I have in my fridge today. But I'm there with all of you in spirit.

Need a distraction from all the dismal news? Check out my "Fifty Beers for 2025." It's long, and not really meant to be read in one go. Return to it whenever you need a break from keeping abreast of the craziness.

Held-Bräu in Oberailsfeld, where you'll find one of the beers on my "Fifty Beers for 2025" list.

You can get here on foot from the stunning basilica town of Gößweinstein in Franconian Switzerland. Perfect day trip from Bamberg.

Afternoon coffee break.

Wish I had a glass of Augustiner straight from the cask in front of me right now. Alas, this memory from 6 weeks ago today will have to sustain me for the next bit.

Wirtshaus Drei Mühlen, Munich

Prost, everyone!

So this is what I was up to a month ago today: snowscapes and blue skies, cozy Wirtshäuser (inns) and decent beer.

My lunchtime lentil curry was tasty, but I wish I could be tucking into one of these dishes right now.

Wechsberg should complement the cookbooks I use in class nicely. The Langseth-Christensen one is a memoir/cookbook written in 1958, and based on her life in Vienna in the 20s when she worked in Josef Hoffmann's design studio. The other is from 2002, compiled by Ewald Plachutta and Christoph Wagner.

Kölsch in those charming pubs in Cologne's old town is all fine and good, but what about what lies beyond?

One fine spot is the gritty Lommerzheim, affectionately known as Lommi.

I found my way there just after the pandemic. It was Sunday and it was packed. That says something.

It's one of those dreary January days, bare tree limbs etched against grey skies. If I close my eyes and let my imagination wander, I'm in Bavaria.

Yesterday @boakandbailey.bsky.social asked which 3 pubs you need to visit before you die. Today I'm asking the same question about beer gardens.

What are some of your favourite beer books of the past two to three years? What's on your "to read" pile for 2025?

My pile:
Walsh, History of Beer in 50 Objects
Kearney, Hidden Beers of Belgium
Tierney-Jones, A Pub for All Seasons
... etc.

Some notables from 2024:
Garshol
Noel
etc.

“On the high seas and in the presence of the Köbes, we’re all in God’s hands.” Karl May, 1884

These words capture the essence of the illustrious Köbes, a beer server with a reputation for sharp wit and cordial gruffness.

Found this cacao pod yesterday at a shop in Tulsa. Not quite sure how I'm going to get there (some fermentation is involved), but the endgame is CHOCOLATE!!!! Yum yum.

Anyone ever made homemade chocolate? Is that even a thing? @davidnilsenbeer.bsky.social, have you ever done this?

You've got these three books from which to choose. Which would you read?

(Every year when I get back from my semester in Vienna, I choose a "big book" to get me back in the swing of things Stateside — "big" in the literal sense: 1000+ pages.)
