Leftovers parts one and two:

dissected and salvaged all the meat I can from one and a half turkey carcasses and chopped it up to make turkey salad.

While I use all the bones for an amazing turkey bone broth.

One Chipotle Garlic

Both will get a balsamic fig glaze with caramelized shallot

Planning a 3 hour smoke at 225°

Followed by a skin crisp at 350° for the final 30 min
