Everything is going to shit in this country, but you know what? I built an herb spiral last weekend and tonight I made some damn good eggplant parm. It was so good that even my kid who hates eggplant loved it! I’m trying to focus on the good things in the world.

These are very fun to make. He is very full of screams and rage.
