this is my most staple meal! not super expensive, i prep it sitting down the whole time, reheats well for lunches/subsequent dinners. I haven’t tried freezing it yet (we gobble this shit up so quick lmao) but i thiiink it’d freeze well? extremely customizable, filling, and yummy regardless.
SHEET PAN GNOCCHI - 1 lb pack of gnocchi - 1 lb of smoked sausage (your choice of meat) - 1 lb cherry tomatoes - leafy greens of your choice (i like spinach and/or kale) - any other hearty veg you like/can get your hands on; pick 1 or 2! (I personally like mushroom, okra, fennel, broccoli, or asparagus) - olive oil - seasonings (i do: season salt, pepper, garlic, thyme, sage, & fennel) - optional: Parmesan 1. preheat oven to 425. line a sheet pan with parchment paper. 2. wash ur produce & dry thoroughly. if your veg is big, cut or rip to bite size. 3. cut your sausage to your preferred size; smaller cut = crispier sausage 4. put everything on the sheet pan 5. drizzle a glug or 2 of olive oil, & add your seasonings. Massage everything until evenly coated 6. bake for ~45 minutes, or until you reach desired texture. if any of ur ingredients were frozen, they might need more cook time. 7. optional: add Parmesan before serving
