As for thickener I use potato starch mixed with water to make a slurry put that in the blender to get any leftover sauce and pour that in the pot once I feel like everything's well Incorporated reduce down until Jam like

Sorry i meant Maillard reaction and what I do with my chili with that is toasting the vegetables that are going to go into the blender another case is i season the meat or you could do chopped veggies on one side and I put that side face down on a hot pan that toast the seasoning into the meat

current champion at my office for chili cook-off a couple tips I can leave here for you are maired is your friend layers of flavor add more to the chili and thickening is always a good option I see a lot of people who would prefer a jam chili instead of a soupy one
