The challenge is always the home oven only hitting 550 so you’re baking for a longer time than a wood fired oven would.

I use a pizza steel for my pizza and it has a learning curve, especially with a higher hydration dough but the results are really nice, if a bit overdone on top.

I’m going to run out of Velcro space on my gym bag pretty soon.
