Had the great fortune to spend today with family, sharing a meal and celebrating my husband’s birthday. He requested a chocolate cake with peanut butter cream cheese frosting.

Triple chocolates? In this economy? I did save money on eggs by making the vegan chocolate cake from The Grit Cookbook. Then I promptly de-vegan-ed it by using butter and cream in the frosting. Life is all about balance.

Baked a hummingbird cake for a friend, went to Cottage Grove, bought stuff from local crafters & artists at a pop-up event, had a yummy Cuban sandwich in Eugene, and spent time with friends I don’t get to see nearly often enough. Take care of yourself & each other. We get through this together.
