Hmmm... I will always recommend sitting with a friendly neighborhood knitter or a YouTube video to start. But, if you're definitely looking for a book try Elizabeth Zimmerman's Knitting without Tears. And I'm partial to the Knitter's Handbook because my grandmother gifted it to me as a child :)
