Today's #DinnerAtTheTrailer is roasted cauliflower & broccoli, sous vide short rib and chuck roast (think brisket) with bespoke BbQ sauce over brown rice.

Tonight's #DinnerAtTheTrailer used the stock from the shrimp to make risotto and added Brussels sprouts and halibut.

#Yum
Brussels sprouts have been sautéed in a cast iron skillet. A wooden spatula pushes them against the side of the pan photogenically. Bicycling risotto with spinach in a cast iron skillet. A serving of halibut over a mound of risotto and sautéed Brussels sprouts all sit on a clear blue glass plate.

When someone gives you perfect shrimp you cook the whole creature and get the most out of it!

Large shrimp in a cast iron skillet with garlic, olive oil, and a touch of lemon. Shrimp cooked with asparagus and served on garbanzo bean cascatelli finished with garlic and anchovies. Stock boiling with shells, garlic, carrots, celery, and shallots. The broth is already turning a fabulous shade of orange because of the roe of some of the shrimp. Look at this incredible rich, orange broth.

He homered on pitch 4 but 0-2 should have been 1-1.

Proof.
A closeup of my silverback gorilla chin. Dark hair still colors my top lip but fades to a steady gray by the chin and whiskers. My beard is thick but not long, a good even coverage with no stray whiskers. I'm wearing a navy turtleneck. Not too bad after a 14 hour day if I do say so.
