Are you sure a comma helps? I've tried placing one after every word and there's no comma that really helps. The word "for" after "cooking" seems to be the right fix to me... [but that's just me, perhaps I'm reading with the wrong accent...-]

What you've said is true - and - reversed.
We say "In theory this should work" when we think we did everything right and believe that it should work - but it isn't.
The call to action is to review, see what doesn't match the theory, change what we can - and re-try (Or update our theory).
