A great tweak to an apple pie is to add about two dozen whole cloves to the spices. They give the pie a nice zip. (Learned this from the cook at a small restaurant off a roundabout near Dublin)

On the contrary, DST resets our mechanical clocks to follow the natural movement of the Sun so sunrise is closer to 6:00, as it was when medieval people followed sun-time. Of course medieval people also kept sunset at 6:00 pm, which would really challenge a mechanical clock.

I can’t speak about Ancient Rome but medieval calendars began with March and ended with the 11th & 12th months of January and February.
